As a ninth-grader, Demi has cultivated over 1,000 oysters, a feat recognized by the National Geographic Society for its potential to spawn millions more and revitalize the Gulf’s marine ecosystem.
A Spark for Stewardship
Demi’s journey into environmental stewardship began in her early teens. While seeking a project for her Girl Scout Silver Award, she discovered oyster gardening at Schooner Pier in Biloxi, Mississippi. What started as a community service endeavor quickly evolved into a deep passion for marine conservation.
Her inspiration came from learning about the critical role oysters play in marine ecosystems. Oysters act as natural water filters and provide habitats for more than 300 marine species. Understanding their ecological importance motivated Demi to contribute to their restoration.

Embarking on this path came with challenges. Initially unfamiliar with oyster cultivation, Demi faced a steep learning curve. Through perseverance and mentorship from researchers at Auburn University, she gained the knowledge and skills to succeed.
Demi focused on the alarming decline of oyster populations in Mississippi’s Gulf waters, caused by natural disasters like Hurricane Katrina and man-made events such as the Deepwater Horizon oil spill. Recognizing both ecological and economic consequences, she committed herself to restoring these vital habitats.
Her solution involved cultivating oysters using off-bottom cages suspended from piers, a method that protects oysters from predators and allows for regular maintenance. Her hands-on approach included weekly visits to clean debris and monitor growth, ensuring healthy development.
To support her work, Demi partnered with the Mississippi Department of Marine Resources for technical guidance and collaborated with institutions like the Walter Anderson Museum of Art to integrate creative storytelling into environmental education. These partnerships have enhanced her project and helped spread awareness about oyster reef restoration in the wider community.
